Yes, it’s high on the glycemic index (at 72), but there are plenty of good reasons to eat watermelon: It’s a naturally sweet dessert that won’t pack on pounds, it’s cool and refreshing on a toasty summer day, and it’s packed with antioxidants that may prevent disease.
Now, tips us to another of watermelon’s powers: It has an ingredient that, when processed, becomes an amino acid that helps relax blood vessels just as they do after a man takes according to researchers at the Texas A&M’s Fruit and Vegetable Improvement Center.
A USDA researcher told reporter Blaney that while this research is valid, a person would need to really gorge on watermelon –six cups, to be precise– to boost the level of this amino acid in the body. (Of course, that’s sugar overloading with fruit.)
But still, this news is fascinating. Makes you wonder if there’s anything watermelon can’t do!
