Recipe: Kale Chips from the Institute for Integrative Nutrition

Feel like crunching something tasty or serving fun but healthy munchies at your holiday get together?

There’s no need for you and your guests to chomp on fatty chips full of carbs. Try Kale Chips instead.

Kale Chips Here is a delicious recipe, provided courtesy of the Institute for Integrative Nutrition (IIN), which I attended in 2006.

Kale Chips

Prep Time: 10 minutes
Cooking Time: 10 minutes
Yields: 10 servings or more

Ingredients:
1 to 2 bunches kale
Olive oil

Directions:

1. Preheat oven to 425 degrees.
2. Remove kale from stalk, leaving the greens in large pieces.
3. Place a little olive oil in a bowl, dip your fingers and rub a very light coat of oil over the kale.
4. Place kale on baking sheet and bake for 5 minutes or until it starts to turn a bit brown. Keep an eye on it as it can burn quickly.
5. Turn the kale over and bake with the other side up. Remove and serve.

Iin Notes:

* Try different kinds of kale or collard greens.
* For added flavor sprinkle with a little salt or spice, such as curry or cumin after rubbing on olive oil.

  1. Connie, I decided to stop eating/drinking sugar on September 22, 1999. I pushed a slice of cake away as I looked at my friend announcing my intentions. My friend just looked away trying not to grin. At the next banquet 2 months later I mentioned to my friend that I had been successful for the previous 2 months … a stunned silence. I was the man who would “buy” icing from my nephews. Yep! I would offer each nephew a quarter for the icing from their pieces of cake. They would laugh and give me their icing. I was the one who used to eat 3 pieces of cake & 2 slabs of pie at the church social. Groan!
    I simply made a decision to stop. I decided to proceed with this decision one week at a time. That is, not to change my mind, but, to make a commitment asking my friends to check on me next week. They did! After 1 month, I made a commitment to do this one month at a time. They checked on me shaking their heads. Finally, a year had elapsed. They were shocked. 2 years, then 3, and so forth. I would say, “I have not eaten sugar for 2 years and you can check back with me one year from now to see how I am doing.” Each week, each month, each year gave me confidence, satisfaction and solidified my decision. The decision remains. To tell you the truth, I really enjoy telling others about my decision. The reactions are typical–disbelief, incredulous, stares, etc. I just smile. I love it!
