Eggplant “Pizza”

A delicious sugarfree appetizer or light meal
1 medium eggplant, sliced 1″ thick
1 tablespoon olive oil
6 tomato slices ¼ inch thick
2 ounces of lowfat shredded cheese
1 teaspoon oreganoPlace eggplant in a single layer on a nonstick baking sheet. Brush with olive oil. Broil until eggplant is lightly browned. Turn slices over. Brush with olive oil. Broil until lightly brown.
Top each eggplant slice with a tomato slice. Broil for another minute or two. Top with shredded cheese. Sprinkle with oregano. Broil until cheese is melted.
Serves 2
