Last year, I joined the the important Meatless Monday campaign.

Let’s get down to basics now. What can you eat if you skip the meat?
It’s very easy to go meatless on Monday. Instead of having chicken, beef or pork, just get your protein (2 to 3 servings) from beans, legumes, eggs, nuts and seeds instead.
Naturally, you’ll want to eat ample vegetables (5 to 5 servings) and fruits (2 to 3 servings), as well as, whole grains (if you choose) and small portions of quality fats (2 to 3 tablespoons).
Plus, I’m excited to learn, the Meatless Monday folks encourage you to limit sweets, sweetened beverages, fried foods, salty snacks and foods with hydrogenated oils. Of course, as readers of this Sugar Shock Blog and my book SUGAR SHOCK! know, I highly recommend cutting out or at least cutting back on sugary foods and drinks for the sake of your health, moods and relationships.

Healthy Vending Machines on the Rise

There’s been a lot of buzz recently about school nutrition and, in particular, the problem with junk-filled vending machines in schools.
“Childhood obesity has more than tripled in the past 30 years,” writes Dr. Oz Garcia in The Huffington Post. “Statistics show that nearly one in three American children are either overweight or obese.”
Dr. Garcia points out that while parents play the most important role in teaching children healthy habits, the U.S. school system plays a very central part in developing a child’s eating habits.
Another article on BusinessWeek, “School Vending Machines Undermine Student Nutrition,” referenced a report from the Journal of Adolescent Health, showing the negative impact vending machine foods had on the purchasing choices of students at about 150 different U.S. schools.
More than 80% of the schools studied carried vending machines offering foods with minimal nutritional value, including chips, soda and candy bars.
Enter Sean Kelly and Andy Mackensen, co-founders of HUMAN Healthy Vending machines, which offer healthier fare in the 30-billion vending machine industry.

In addition to providing healthier choices, HUMAN Healthy Vending machines include an eco-component with remote monitoring systems to ensure eco-friendly refilling. Plus, they contain LED lighting and energy-efficient refrigeration units to save power. In addition, the company donates 10% of proceeds to charitable causes that fight childhood obesity and malnutrition.
You can find these HUMAN Healthy Vending machines in schools, offices, hotels and hospitals, as well as health clubs, gyms and spas. In New York City, you can find these machines at the Aveda New York Institute, Mt. Sinai Medical Center and in the new offshoot of Equinox, Blink.

Please note, however, that while these snacks are far healthier than what you find in traditional vending machines, not all of these foods are healthy by everyone’s standards. So just follow your doctor’s guidelines and eat what works for you. Recipe: IIN Winner Frank Giglio’s Seared Scallops with Cucumber Salad

The Institute for Integrative Nutrition, the wonderful school I attended in 2005-2006, recently held a “What’s on Your Plate?” contest.
Here’s the yummy recipe winner from chef Frank Giglio. Thanks, IIN and Frank, for sharing this with us!
Seared Scallops with Cucumber Salad
Serves 2
Ingredients:
2 Tablespoons coconut oil
4-8 Large scallops (U-10)
A sprinkle of Frank’s Finest Lemon-Pepper Blend
1 large English cucumber
2 Tablespoons thinly sliced red onion
1 cup snap peas, cut into 3rds
1/4 cup fresh dill, roughly chopped
2-3 teaspoons apple cider vinegar
1-2 Tablespoons olive oil
Sea salt to taste
Freshly cracked black peppercorns
1/2 lemon for drizzling
1 green onion, tops sliced thin
Directions:
With a Japanese mandolin or sharp knife, thinly slice the cucumber. Place into a large bowl, mix in the snap peas, onions, and dill. Drizzle in the olive oil and vinegar, then season with sea salt and freshly cracked black pepper. Toss well and allow flavors to meld.
Place the scallops on a dish and season with Lemon-Pepper blend
Heat a large heavy bottom skillet over medium-high heat. Melt the coconut oil and when a light amount of smoke is visual, add the scallops. Cook on one side until well browned, then flip each scallop, turn off the heat and allow to rest in the pan for 1-2 minutes before removing.
Place a small amount of cucumber salad onto 2 plates. Place 4 scallops around each salad. Drizzle the plate with lemon juice and sliced green onions. Serve and enjoy!
